Level 2 Commercial Food Preparation Cooking seeks to provide trainees with more hands-on practical skills. Building on the base fundamentals covered in Commercial Food Preparation Cooking Level 1. In level 2 trainees will continue practising and developing their technical skills by producing more elaborate dishes with elevated plating techniques, catering function, keeping an inventory, basic bartending, and wine service. Individuals will become more self-aware, self-monitoring, and able to self-correct when performing a task. The trainee will be empowered to grow as a skilled/independent work which is essential for gained employment. They will continue to expand critical soft skills such as work ethics, communicating with co-works, fostering team-building skills, customer relations. The duration of This program is for six-months at the Centre with a two-month internship (on-the-job training) in the Tourism Industry in a restaurant or resort kitchen.
